Making A Apple strudel dough
2 1/2 cup /300 gr. flour
(high-gluten or bread flour)
1/2 teaspoon salt
150 ml lukewarm water
4 tablespoon oil
1 large egg yolk
To make the Strudel dough, combine egg yolk, salt, lukewarm water and 3 tbsp. oil in the bowl of an electric mixer fitted with the dough hook. Reduce the mixing speed to low and gradually add the flour, mixing until the dough comes together. Increase the speed to medium and mix until the dough pulls away from the sides of the bowl. Take the dough an cover with plastic wrap and set aside to relax in a warm place for at least 1 hour.
8 apples peeled, cored, and cut into 2-inch cubes (Braeburn, Elstar, Boskop, Granny Smith)
1/2 cup /70 gr. almond slices
1/3 cup / 60gr. sugar
1/2 cup / golden raisins (soaked in black tea or rum)
1/2 teaspoon cinnamon
1 tablespoon lemon juice
1/2 cup / 100 gr. sweet crumbles (biskuit)
Meanwhile peel and core and cut the apples. Stir together the sugar, cinnamon, raisins, almond slices and sweet crumbles. Mix together with the apples and lemon juice. Set the filling aside at room temperature or in the refrigerator.
one of the secrets to prepare a dough is, after an hour of rest, don't knead it. Use a rolling pin to get it very thin and after that use your hands to stretch softly the dough.

Now, your dough is very thin. Use a clean kitchen cloth and put some flour on it. Then start filling your dough. From the middle put your filling to every side.
Preheat the oven to 425 F / 200 Grad and line a large baking sheet with parchment paper.
