Chana masala step 1

2 tbsp oil or ghee
1/2 cumin seeds
1/2 cup onions (red or white)
1/2 tbsp ginger
2 tsp chopped garlic
4 bay leafs
1 cinnamon stick
Heat the oil or ghee in a pan and add the cumin seeds. Once the cumin seeds start to splutter/pop add your onions together. Saute the onions until they are translucent, add ginger and garlic.

Chana masala step 2

1 cup fresh chopped tomatoes
1/2 tsp tumeric
Add tomatoes, tumeric and let them saute until the whole mixture looks homogenous.

1 cup chickpeas, soaked (over night) and drained OR 2 cans 15 oz chickpeas
2 tsp garam masala
1 tsp chili powder
1 tsp mango powder
2 tsp cumin powder
2 tsp coriander powder
salt to taste
Add the rest of the spices and the chickpeas.

Mash softly the chickpeas and let it simmer. Decorate it with fresh cilantor and serve with rice or a warm naan bread.
